Lentils – in Marko’s latest dinner recipe they’re great. This twist on the classic Moussaka is well worth a try! It serves four, provides two of your five-a-day and to top it off, it’s just 336 calories a portion.
Lentil & Vegetable Moussaka (serves 4).
1 tbsp Olive Oil
1 onion
3 carrots diced
2 Large tomatoes diced
200g Red lentils
1 vegetable stock cube
2 Courgettes
1 x 250g carton Cottage Cheese
2 Eggs
25g Cheddar cheese
Method
- Preheat oven to 200c (Gas Mark 6). Finely dice the onion, cube the carrots and tomatoes.
- Heat 2 tsp oil in a pan, add these vegetables and cook until they begin to soften. Add the lentils. Crumble the stock cube into 600ml water. Add. Cover and simmer gently for about 20 minutes until the lentils are cooked, stir occasionally.
- Slice courgettes into long thin strips and cook on a griddle pan until soft. Place lentil mix in ovenproof dish and layer courgette strips on top. Place the cottage cheese and eggs in a bowl and mix till smooth and pour over the courgettes.
- Grate the cheese and sprinkle on top. Cook for 25-30 minutes until golden.
