Quinoa, it’s the super food that everyone’s talking about. Try this veggie option for your supper dish this weekend – it’s another great recipe from our nutrition king Marko Humphrey.
Quinoa Pilaf
Serves 4 and 2 of the magic 5-a-day
Ingredients:
Olive oil
1 red onion, finely chopped
1 red pepper, chopped
175g quinoa rinsed
450ml hot vegetable stock
40g pumpkin seeds
handful chopped flat leaf parsley
Handful chopped spinach
squeeze of lemon juice
black pepper
Method:
- Heat oil in a large frying pan, add the onion, bell pepper and saute for 10 minutes
- Add quinoa and stock and bring to the boil, reduce to a simmer. Cover and cook for 15 minutes or till the quinoa has absorbed the water and softened.
- Stir in the pumpkin seeds, parsley and spinach, then season and add a squeeze of lemon
