Creamy Salmon with Leeks
Serves 2
Ingredients
2 tsp Olive Oil
2 Courgettes thinly sliced
3-4 leeks, thinly sliced
75g Creamy soft Goat cheese
210ml Full fat Milk
2 tbsp Cornflour
410g Can Butter Beans
100g Smoked Salmon, torn in strips
4 Spring onions, finely sliced
2 tsp Dill, chopped
Method:
- Heat the oil in a large pan and saute the courgettes and leeks until they start to soften.
- Add the goats cheese and half the milk and stir while the cheese melts
- Mix the cornflour with the rest of the milk to form a smooth liquid and add to the pan, stir constantly to avoid lumps as the sauce thickens.
- Tip in the drained butter beans, smoked salmon, spring onions, and dill and heat through.
