Magna Vitae’s nutrition king Marko has a super recipe using super food – yes, quinoa. It’s quick, easy and tastes great – a good one for the vegetarians out there. It will serve 4 at your weekend supper table.
Black bean & Sweet Potato Chilli
Ingredients
1 tpsb extra-virgin olive oil
1 medium sweet potato, peeled and diced
1 large red onion
2 cloves garlic, minced
Half teaspoon ground cumin
Half teaspoon chili powder
Pinch salt
3 and a half cups veg stock
I can black beans, rinsed
I can chopped tomatoes
Half a cup of dried quinoa
4 teaspoons of lime juice
Black pepper
And here’s how…
Heat the oil in the pan over a medium heat. Add the sweet potato and onion and cook for about 5 minutes, until the onion is soft.
Add the garlic, chilli powder, cumin and salt and stir to combine.
Add the stock, tomatoes, black beans and quinoa and bring the mix to the boil. Cover the pan and reduce the heat to maintain at a gentle simmer.
Cook for about 30-40 minutes until the quinoa is fully cooked and the sweet potato is soft and the mixture is slightly thick.
Add the lime juice and remove the pot from the heat.
Season with black pepper…
…oh, and it’s great with rice.
